For us, it is a matter of course to treat our products as gently as possible in order to keep our winemaking on the pulse of time. To this end, our cellar team has the latest cellar technology at its disposal for processing grapes, must and wine. We were the first winery in Germany to introduce controlled fermentation. By building our new cellar in Bingen in 2021 to the latest standards, we were able to further expand our cold fermentation capacities. This gives our cellar team the tools they need to produce fresh, aromatic and distinctive wines and preserve the quality of our products. State-of-the-art filtration technology allows us to clarify our wines particularly gently, in just one step. Tartrate stabilisation by electrodialysis is also possible at Reh Kendermann.
Vineyard and grapes
We can only create unique wines if the quality of the grapes is right. This is why we are in close dialogue with our contract winegrowers and partners. Our winemakers accompany them throughout the year to ensure the best possible grape quality. Particularly in the context of our premium projects, this also includes the implementation of yield-regulating and quality-promoting measures as well as the joint determination of the harvest time. This enables our team to ensure an optimal grape ripeness and create the best conditions for high-quality wines.
